Which hole size do I need?
- 3mm — very fine mince for sausages, kofta, pâté and burger blends needing tight bind
- 3.5mm — fine mince, the standard for most sausage and burger production
- 4mm — fine-to-medium mince, popular for retail butchery
- 4.5mm — medium mince, all-purpose
- 6mm — coarse mince for chilli, ragù, meatballs and pet food
- 8mm — very coarse, first-pass plate for two-stage mincing
Hub vs no-hub
The hub is the raised central boss on the plate. Most newer machines need a hub plate; older or lower-spec machines often run a flat (no-hub) plate against an internal drive pin. If you're unsure, pull your old plate out and match it before ordering.
Pairs with
Run it with a fresh Salvador No.22 mincer blade or Torrey No.22 mincer blade. Blades dull before plates — replacing the blade restores cut quality at a fraction of the cost.

Will this fit my mincer?
Any mincer labelled "size 22" or "No.22" — Salvador, Sirman, Kolbe, La Minerva, Sammic, Vivo, Geepas and dozens more all use the same standardised plate size.
What's the smallest hole size you do?
3mm is our finest No.22 plate, sold with or without hub. Sub-3mm emulsion plates aren't standard on size 22 mincers.
Can I order in bulk?

How do I keep the plate sharp?
Plates blunt slowly but the cutting edge can be re-lapped on a flat stone. Most butchers swap rather than re-grind — plates are cheap, your time isn't.
