The test: two knives, weeks of real use

The comparison was simple. Two boning knives, both from well-regarded professional ranges, used side by side on the same jobs over an extended period, with no special treatment given to either. Straight out of the packet, the other knife felt noticeably sharper than the Ambrogio Sanelli. But that gap didn't last. Why the other knife felt sharper on day one
